Upon Further Review:

One thing about this business, customers decide success. The area in the US where you do business, is the area where you make your money. Research says that 90% of the population in America eats beef regularly. Therefore, most places have at least a couple of beef dishes on the menu. Do not try to force customers to like what you want them to like, but let them help dictate the menu. I have done much research on this, and have come to one conclusion. The failing restaurants fail to adapt their environment. I have researched each region in the US, and have found the common ground. The proteins remain the same everywhere.
